My take on that is either he did hear her, or that sometime after the episode ended she told him. (One of the things I like about this show is that it's written in such a way that it seems like things are happening even when we're not watching. Chuck, Sarah & Casey are going on missions we don't know about, Sarah & Chuck are going on cover dates, Chuck's doing actual installs and work at the Buy More sometimes, etc.) - I assume that the pizzas were ordered by Ellie or Awesome, and when they asked "Is vegetarian okay with everyone?" Sarah just agreed to be polite, figuring she could easily pick the olives off. That's what I'd do anyway. -Maybe Chuck just sent the diamond to CIA headquarters in Langley, VA, or the NSA headquarters in Fort Meade, VA. He was seen typing on the computer before he slapped the label on the box, maybe he just looked an address up online. And then he lied to the bad guy about not knowing where it was going.
